Une base d'agave divisée et une longue fermentation confèrent à notre Ensamble une acidité arrondie et un funk mûr rappelant le vin nature. Le nez vous accueille avec du cuir et du bois de santal, suivis d'abricot rôti, de cacao et de zeste de pamplemousse, avec une douceur crémeuse et boisée. Un mezcal à déguster pur.

Opened this after dinner and the nose hit me with leather and sandalwood before I even poured it — exactly what the description promised. That roast apricot note carries through the sip, and the acidity keeps it lively instead of heavy.

That rounded acidity from the long fermentation really comes through on the palate, like a funky natural wine but with that smoky mezcal backbone. The roast apricot note is the star for me, it lingers nicely after each sip. Killed the bottle way faster than I planned.
