Een split agave-basis en een lange fermentatie geven onze Ensamble een ronde zuurgraad en rijpe funk die doet denken aan natuurlijke wijn. De neus begroet je met leer en sandelhout, gevolgd door geroosterde abrikoos, cacao en grapefruitschil met een romige, eikenachtige zoetheid. Eentje om puur van te genieten.

Opened this after dinner and the nose hit me with leather and sandalwood before I even poured it — exactly what the description promised. That roast apricot note carries through the sip, and the acidity keeps it lively instead of heavy.

That rounded acidity from the long fermentation really comes through on the palate, like a funky natural wine but with that smoky mezcal backbone. The roast apricot note is the star for me, it lingers nicely after each sip. Killed the bottle way faster than I planned.
