Una base di agave divisa e una lunga fermentazione conferiscono al nostro Ensamble un'acidità rotonda e un funk maturo che ricordano il vino naturale. Al naso si presenta con cuoio e legno di sandalo, seguiti da albicocca arrostita, cacao e scorza di pompelmo, con una dolcezza cremosa e legnosa. Perfetto da sorseggiare liscio.

Opened this after dinner and the nose hit me with leather and sandalwood before I even poured it — exactly what the description promised. That roast apricot note carries through the sip, and the acidity keeps it lively instead of heavy.

That rounded acidity from the long fermentation really comes through on the palate, like a funky natural wine but with that smoky mezcal backbone. The roast apricot note is the star for me, it lingers nicely after each sip. Killed the bottle way faster than I planned.
