A split agave base and long fermentation give our Ensamble a rounded acidity and ripe funk reminiscent of natural wine. The nose greets you with leather and sandlewood, followed by roast apricot, cacao and grapefruit zest with a creamy, oaky sweetness. One for sipping neat.

Opened this after dinner and the nose hit me with leather and sandalwood before I even poured it — exactly what the description promised. That roast apricot note carries through the sip, and the acidity keeps it lively instead of heavy.
